Pomegranate and Fig bites

This is one of the best ways I have come up with to get some  protein into your morning. Spread a half a portion of The Laughing Cow Extra Light on each cracker and add slices of figs and a bit of pomegranate juice, et voila: a seriously delicious light breakfast !

  1. Spread two portions of The Laughing Cow Extra Light onto each cracker.
  2. Sprinkle a few peppery rocket leaves on top of each cracker and lovingly arrange slices of fig on top.
  3. Complete with a scattering of juicy pomegranate seeds and prepare to devour
  4. Enjoy !
